Chocolate Cream Puffs

  • 1 cup hot water
  • 125g butter
  • 1 cup plain flour
  • 4 large eggs
  • 1 tablespoon cocoa

Chocolate Cream

  • 100g cooking chocolate
  • 2 eggs separated
  • 450ml whipped cream

Place water and butter in medium saucepan, bring to rapid boil. Quickly add sifted flour stirring until mixture leaves the sides of the pan. Remove from heat. Add eggs one at a time, beating well after each addition. Beat in sifted cocoa. Placed heaped teaspoonful of mixture on lightly greased tray, allow room for spreading. Bake in hot oven 200°C. 10 minutes – reduce to moderate 180°C, bake further 40-45 minutes, makes approximately 30.

For Chocolate Cream
Melt chocolate in bowl over hot water, cool slightly. Add egg yolks, beat until smooth. Whip egg whites until stiff. Fold cream and egg whites into chocolate mixture.

To serve – fill each puff with chocolate cream. Drizzle over melted chocolate if desired.
