Chocolate Cream
Place water and butter in medium saucepan, bring to rapid boil. Quickly add sifted flour stirring until mixture leaves the sides of the pan. Remove from heat. Add eggs one at a time, beating well after each addition. Beat in sifted cocoa. Placed heaped teaspoonful of mixture on lightly greased tray, allow room for spreading. Bake in hot oven 200°C. 10 minutes – reduce to moderate 180°C, bake further 40-45 minutes, makes approximately 30. For Chocolate Cream To serve – fill each puff with chocolate cream.
