Lemon-Ginger Sponge Pudding

1/4 cup flour sifted
1/2 cup sugar
1 tsp ground ginger
2 eggs separated
1 cup milk
1/3 cup lemon juice
finely grated zest of lemon
2 tbsps butter melted
4 tsps finely chopped glace ginger (optional)

Preheat oven to 180 deg C. Combine flour sugar,ginger and egg yolks. Mix in milk, lemon juice, zest and butter. Beat egg whites until fluffy & gently fold into mixture.

If using glace, sprinkle on base of 23cm sq. baking dish. Spread mixture in dish and place in a larger baking dish or roasting pan. Fill outer pan until with hot water to come halfway up to sides of smaller dish.

Place in oven & bake until risen & spongy, 45 minutes (ramekins will take 30 mins). Lift individual puddings out onto small plates, taking care not to burn yourself when removing from water bath.
